03/10/2025 Vogue FranceLocated on Avenue Victor Hugo, Prunier has built a legend of its own since opening in 1921, shaped by famous guests, French savoir-faire and colourful anecdotes. A favourite among the Moscow aristocracy, the restaurant also welcomed the likes of Oscar Wilde, Marcel Proust, Ernest Hemingway and F. Scott Fitzgerald. It was even once owned by Pierre Bergé and Yves Saint Laurent, who were known for hosting many extravagant parties there.
Having lost some of its lustre in recent years, the restaurant has been given a new lease of life. Under Lapérouse Holding, led by Benjamin Patou and Antoine Arnault, the group already behind Lapérouse and Lafayette’s, the revival is first and foremost reflected in a refreshed interior designed by Lázaro Rosa-Violán.
Remaining true to its Art Deco heritage, the redesigned interior features carpets adorned with shellfish and crustacean motifs, ebony velvet seating, mustard-coloured bar stools and softer, subdued lighting.
Another major change is the arrival in the kitchen of Barcelona-born chef Romain Fornell. Supplied by Prunier’s own sturgeon farm in Aquitaine, the menu offers an extensive selection of caviars, including Baeri and Oscietra, served with mother-of-pearl spoons or on homemade blinis, just as Yves Saint Laurent enjoyed them. The menu also showcases premium seafood staples, including oysters, salmon roe, taramasalata and Malossol pickles.
These sit alongside iconic dishes such as caviar linguine and the Christian Dior egg, delicately served on a fine jelly, as well as more adventurous creations featuring Iberian ham, a crisp lobster salad, and desserts including a caramel sundae and pistachio ice cream.
Accompanied by a carefully curated soundtrack, Prunier has already become a sought-after destination for Fashion Week dinners, offering plenty of reasons to rediscover this historic Parisian institution.
